To shape the dough for Rosh Hashana in a circle:
Make a long snake with the dough about 1 1/2 feet long, then twist it while making it higher as if you are shaping the shell of a snail,
OR
Make a 3 line braid long enough to pull ends together to make it a circle,
OR
Make lots of balls and put them close together in a round pan.
Let the shaped dough rise for 30 minutes
Paint each one with egg and honey
(for 5 lbs of flour use 1 egg and 1 TBLS honey)
Bake for 30-40 minutes on 350 (until golden)
